Kale and chickpea stuffed apples

We have been out picking apples, thought I’d stuff a few with some ┬ákale from the garden, and bake them.

They tasted amazing not what you would expect, sweetness of the apple crunchiness of the kale on top.IMGP1205 IMGP1206

  • 4 cooking apples( I used our Sturmer Pippins) Granny Smith are good too.
  • 100g Kale with storks removed.
  • 100g of cooked chickpeas (fresh or tinned)
  • 1 clove of garlic
  • 1 teaspoon fresh grated ginger
  • 1 small fresh chilli
  • 4 tablespoons of olive oil.
  • salt to taste.
  1. Turn the oven to Moderate 180, or high on the wood stove
  2. Wash and core apples.
  3. Chop Kale
  4. Cook chickpeas in water or use tinned chickpeas.
  5. Chop garlic and chilli finely, grate the fresh ginger.
  6. In a large frying pan saute garlic, chilli and ginger for 2mins then add the chopped kale and chickpeas, continue cooking for a further 5mins.
  7. Place apples into a baking dish and stuff apples with the kale chickpea mix then drizzle with the rest of  the olive oil. Put into oven for 1hr. Kale should crisp up and apple sugars should brown slightly.
  8. Serve hot or eat warm.
